Today’s recipe is one I love having for a mini-meal, snack, or late night sweet treat. It’s pretty popular, so you may have heard of it before. But if not? Prepare to have your munching routine shaken up in a whole new, wonderful way!
All you need are two things: A small box of jello (regular or sugar free) and a cup of cottage cheese. Okay, so you’ll need three things if you count water as an ingredient. But I’m not going to!
What do you do? Simple. Put your jello mix into a 2-cup bowl, then pour one cup of boiling water over it. Stir it for about a minute, until the powder is completely dissolved. Then stir in your cup of cottage cheese. Cover and refrigerate until it firms up (3-4 hours). When you’re ready to eat, use an immersion (stick) blender to puree the mixture into a lovely mousse.
Optional additions: Top with your favorite fruit, and enjoy! I also like to stir in some Fiber One or pretzel bits, but you’ll find that I love to do that with a lot of my recipes.
For a pie-like effect, sprinkle some graham cracker bits over the top!
This is of course wonderful with any flavor gelatin, but some of my favorites are lime (tastes sort of like key lime pie) and lemon, which tastes amazingly fresh and tangy with a few raspberries mixed in.
