You will just looove today’s recipe. I guarantee it. I think my husband loves me just a little bit more on the days when he comes home from work and sees a plateful of these cookies. It’s rare for them to last more than a day or two in our house. The best part is, not only are they quick (no baking!) and ooey and gooey and delicious–they’re also packed with protein and fiber!
Here’s what you’ll need:
1/2 cup sugar (If you want, you can sub another granulated sweetener)
1 cup milk
1/4 cup honey
3/4 cup vanilla protein powder
1 cup peanut butter (I like crunchy but you can use creamy of course!)
4 cups quick oats
Optional: Stir in some raisins, chocolate chips, coconut, etc!
Here’s What Ya Do:
Over medium heat, cook the sugar, milk, and honey in a pot until it bubbles. Lower the heat and stir in the peanut butter until it melts. Stir in the protein powder, then remove from heat and quickly stir in the oats until it’s all combined. Drop into evenly-sized balls onto waxed paper and shape into cookies, or pour into a sprayed pan and cut into bars after it cools (if you can wait–but I bet you won’t be able to!).

I don’t have it off-hand, but if you use any free programs like FitDay or CalorieCount all you have to do is plug in the ingredients and then divide it by the number of servings you have!
So, I don’t have any protein powder. How do you think these would fare with a bit of vanilla extract and some flax seed for bulk?
Hmm…I don’t know how that would work! I think the protein powder adds sweetness and flavor, along with the obvious benefit of protein
But why not give it a shot and let me know how it turns out?
